Hi Eric. Some other cheese shopping options close to home include Tacoma Boys (they have a great selection there and wine, too!). Stink in downtown Tacoma is a great cheese shop. They are on St. Helens. I’ve heard good things about My Cheese Shoppe in Puyallup that recently opened as well. Enoteca on 21st in Tacoma has a good selection, too. I hope this helps. The story does answer the question – check out page 37 in the section about blooming rinds.On page 42 the cheesemonger actually advises you not to waste the rinds of the hard cheeses because they make an excellent addition to stocks and sauces.
